Sorry, this one won’t help you much in the healthy category, but they sure are easy!
- 1 can of pumpkin – 30 oz (or even 3/4 a can, they are really moist already!)
- 1 box of spice cake mix
- Thats it!
In our case, we didn’t have spice cake on hand, but everyone has a yellow cake around, right? Just add:
- Whatever spice you can find. We had allspice, cinnamon, and pumpkin pie spice.
Mix. No seriously, that’s all there is to it.
It is really light and fluffy.
Cover a cookie sheet with either:
- parchment paper or
- cooking spray
and blob ’em on.
- Cook for 13 – 15 min (possibly even less)
- At 350
By the way, if you use cooking oil and your cookie sheet is a bit warped, these are so light they might slide a bit!
While they don’t need it, you can make a simple, quick frosting glaze with:
- Powdered sugar
Basically whatever amounts of each, you can’t really mess this up.
Drizzle. No seriously, I told you this was easy.
Those darker ones have a little cinnamon and pumpkin pie spice in the slatherin’ sauce.
Did I mention that they are really moist and light? As you can imagine with just the cake plus pumpkin.
The whole think takes 20, maybe 30 minutes and the result is delicious!
